The property continues to receive both National and International awards for product and service within the industry. The hotel is positioned at the top of the Hilton brand for quality service and was recently awarded #1 in the Americas by Hilton Worldwide for 2016. The incumbent of this position will take full responsibility of all aspects of Food and Beverage operations at theWit hotel. The successful candidate will have the organizational capability, creativity, flexibility and commitment required to successfully manage the Food and Beverage operations of the hotel and to run the operation profitably ensuring full implementation of theWit standards of service, safety and the highest levels of guest satisfaction.The Director of Food and Beverage is responsible for the overall Food and Beverage operations, budgeting, and maintenance of quality standards, training, and performance management of all colleagues. The role encompasses all F&B restaurants, to include ROOF, State and Lake Chicago Tavern, as well as Banquets and IRD.The Director of Food and Beverage reports directly to the General Manager and represents the respective division on the Executive Committee.
Responsibilities will include:

Duties and Supporting Responsibilities:• Participates in the formulation of strategic business plans for the hotel.• Complete ownership for the ongoing training and development requirements in the F&B division.• Closely monitors the daily, weekly and monthly financial performance of all outlets providing solutions to improve problem areas and assisting in implementing corrective measures.• Participates in the preparation of the annual budget and marketing plan, taking ownership for the F&B Division.• Preparation of F&B Annual Capex plan and management of Capex projects and expenditure.• Work closely with Chief Engineer to oversee maintenance of all F&B areas as required.• Manage monthly reporting systems to monitor; Key Performance Indicators, reputation management reports, operational expenses, event financial performance, and other related tasks.• Handles all guest complaints expeditiously to complete resolution.• Oversee staff performance management of all F&B colleagues.• Coach and develop middle management through coaching within the F&B Division.• Provides monthly forecast of all F&B revenues and expenses.• Participates in public relations activities, sales calls or other promotional outreach activities designed to enhance the image and profitability of the food and beverage department of the hotel.• Partners with Sales and Public Relations to manage the roll out of the annual promotional schedule and to create additional programs or promotions to improve the profitability and image of the food and beverage operation.• Monitors and analyzes competitor operations in order to assess their activities and trends and to ensure that we continue to lead the competition.• Works closely with the Executive Chef and the culinary team to exceed guest’s expectations throughout their experience at the hotel. • Exemplify with hotel’s Standard Code of Conduct and all other regulations established by management and Employee Handbook• Represent the hotel in a positive manner at all times.Requirements:• 5+ years’ experience in a comparable position in a similar lifestyle or resort hotel environment.• Excellent leadership and communication skills.• Hospitality Management or related degree.• Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar management, Banqueting, In Room Dining, Culinary and Stewarding.• Flexible work hours to meet the demands of a 24 hour operation.• Must be highly analytical and able to work expansively with spreadsheets and budgeting packages.• Possess excellent organizational and administrative skills.• Quality driven with a passion for excellence in guest service and satisfaction.• Approachable, open minded and fair.• Professional and appropriate business appearance and presentation.Desirable• HACCP certification or equivalent is highly desirable.
